MEMPHIS, TN (WMC-TV) - Long before many Mid-Southerners begin thinking about lunch and dinner, staff at Southern Hands restaurant in the Hickory Ridge Mall are busy cooking up their menu.
"Fried chicken, turnip greens, candied yams," said Cassandra Baskin. "Everything is fresh."
Baskin said the fresh food restaurant is a family affair among her four brothers and sisters and her mother, Betty.
"My mom always said we had 10 percent money and 90 percent faith," said Baskin.
Baskin said faith kept the family going even after their first restaurant failed several years ago in North Memphis.
"It was a learning experience," she said.
Several years later, the family tried again with a restaurant in Collierville. Last year, Southern Hands was handpicked by Hickory Ridge Mall officials to open in the old Applebee's restaurant just outside the mall's front doors.
Baskin said business has been good every day.
"A lot of growth," said Baskin. "It's been wonderful down here for us. We are so blessed."
Hickory Ridge mall officials said they picked Southern Hands because of the Baskin family's good food, business sense and Christian values.
"For instance, this used to have a bar," said Baskin. "It doesn't have a bar now. We don't sell alcohol. It's strictly family oriented."
