Andy's Rest. Scorecard: Subway Above Par & Perfect, plus low scores as of March 24

MEMPHIS (WMC TV) - For the fifth time in seven months, a Mid-South Subway store has earned the high score of the week.

And for the second time in the same period, it's perfect!

The Subway in Fox Meadows, 3647 S. Mendenhall Rd., earned a perfect 100 on its health inspection March 25.

"Keeping it clean!" declared on-site manager Latasha Rucker.

"The food is always good, and the people are nice in here," said customer Kenneth Austin of Parkway Village.

Subway consistently out-performs other fast food chains on the Scorecard.  Last month, three Mid-South Subway stores pulled a trifecta, owning each of the top three health inspection scores (please read that Scorecard report here:

That's when we discovered corporate Subway has its own inspectors. They surprise each and every Subway franchise once a month, more often than even the Memphis-Shelby County Health Department's restaurant environmentalists.

"You never know when they're coming," said Rucker.

Southern Hands, 6025 Winchester in Hickory Hill, rated a 73 March 24 with a food permit suspension notice:

"employee washed hands in dishwashing sink instead of hand sink"

"raw chicken (at unsafe food temp)"

"raw hamburger mixed w/fixings and spices (at unsafe food temp)"

"We do grind our meat (with our hands)," said owner/operator Earlena Brown. "We grind our meat because we're 'Southern Hands,' and we use our hands to do everything.

"So when (the inspector) came in and checked it, she checked it with our hand temperature on our meat. That made the temperature rise a little bit."

Brown said she and her staff are taking food hygiene courses offered by the health department to brush up on their procedures. She said she anticipates at least a 10-point bump on the follow-up.

The Haystack, 6560 Highway 51, Millington, TN, earned a 74 March 22 with a permit suspension notice:

Inspector wrote "DIRTY" 19 TIMES to describe:  commode, cooler outside, cooler inside, freezer inside, freezer outside, ice diverter, floor, walls, floor in dishwasher area, dishwasher/3-compartment sink, handsink, griddle/grill, vent-a-hood, microwave oven, kitchen floor

"no hand soap/paper towels at handsink"

"open food in cooler" that was not cooling

"inaccurate thermometer" inside cooler

"He said I had dirty equipment," said owner Laurie Warrington. "Like the griddle. It's just dark from cooking on it.

"The building is old. It's not like the place is filthy. It's just old."

Action News 5's inspection revealed The Haystack was pretty clean. Warrington had repaired the cooler. She said she planned to purchase a working, accurate thermometer before her restaurant's re-inspection.
