Andy's Restaurant Scorecard: Stateline Ribs & Tips

(WMC TV) - THIS WEEK'S BIG TIP:  Stateline Ribs & Tips, 5308 S. Third St., South Memphis, (901) 785-0673.

He liked his ribs dry.

Keep the sauce to yourself, he always said.

Then Teavell Cannon ordered the tender, juicy rib tips at this little strip shop just south of Holmes Rd. and north of the Tennessee-Mississippi line.

He likes his ribs wet now.

"I don't like sauce on my ribs, but, man, I ate sauce and all!" exclaimed Cannon like a man reborn in rib nirvana.

Typical reaction from folks who feast on Chef Kelvin Ferguson's ribs, pork chops, chicken wings and his most tender tips. 

"We try to get as much fat off the tips as possible, so that makes them more tender also," Ferguson said.

Ferguson opened Stateline Ribs & Tips four years ago after stints as head chef at The Butcher Shop and Grisanti's Bol a' Pasta, both in Cordova, TN.

When Stateline Liquors opened in his South Third neighborhood, he thought, well, liquor and ribs go together.

So he opened Stateline right next door and quickly nourished a following with his sweet sauce.

"It's like a honey barbecue," said 5-day-a-week regular Michelle Fleming. "Just Southern home barbecue to me."

"We never do too much salt," said Ferguson. "All of our seasoning is basically not salt."

Less sodium, better health.

Better head to Stateline. Before the line's out the door.
