Recipe: Amazing Apricot Bars

•3/4 cups all-purpose flour
•½ cup whole wheat flour
•3/4 cup quick oats, uncooked
•1/2 cup sugar substitute of your choice
•1/2 teaspoon ground cinnamon
•1/4 teaspoon baking powder
•1/8 teaspoon light salt
•1/4 cup light cold stick butter
•¼ cup unsweetened applesauce
•2 tablespoons water
•1 teaspoon pure almond extract
•3/4 cup apricot preserves
•½ cup chopped apricots
•½ cup slivered almonds

1.  Combine flour, oats, chopped apricots, sugar substitute, cinnamon, baking powder, and salt. Cut in butter with a pastry blender. Stir in applesauce. Stir in water and almond extract until well blended.

2.  Reserve 3/4 cup flour mixture. Press remaining mixture firmly and evenly onto bottom of lightly greased 8-inch square baking pan. Bake in preheated 375 degrees F oven 12 to 15 minutes or until mixture is lightly browned at edges.

3.  Remove from oven and spread with preserves. Sprinkle with reserved flour mixture, pressing gently into fruit. Top with slivered almonds.  Bake an additional 20 to 25 minutes or until flour mixture is lightly browned on top. Cool completely on wire rack. Cut into 16 squares. Yield: 16 servings.
