Peabody chefs whip up traditional duck recipes, sans sacred duck

MEMPHIS, Tenn. (AP) - At The Peabody hotel, even well-heeled guests play second fiddle to the ducks who are escorted with pomp each day from their rooftop habitat to the lobby's fountain.

So it wouldn't stand to turn around and cook them, hotel chefs decided in coming up with a menu for a special dinner in New York that will honor the famous fowl tradition's 75th anniversary.

Reinaldo Alfonso, chef de cuisine for Chez Philippe, one of The Peabody's restaurants, says it will make classical duck preparations at the dinner - but without the duck.

Thursday's $200-a-plate dinner is sponsored by the James Beard Foundation, a not-for-profit organization dedicated to American cuisine.

But other animals will play their part, such as a cassoulet made of goose confit, pork-garlic sausage, cocoa beans and garden vegetables, and a variation on traditional foie gras made from chicken liver. Veal will stand in for Peking Duck, pheasant for a consomme.
